Description

Delight in these Strawberry Cheesecake Brownies, a luscious fusion of fruity strawberry brownies topped with creamy cheesecake frosting and a crunchy strawberry cookie crumble. Perfectly moist and flavorful, these brownies are a fun twist on traditional treats, blending cake mix, Jell-O, cream cheese frosting, and Oreo crumbles for an irresistible dessert.

Ingredients

Strawberry Brownie Ingredients

  • 15 oz strawberry cake mix
  • 2 eggs
  • 2 Tbsp strawberry Jell-O mix
  • ½ cup unsalted butter, melted

Cheesecake Frosting Ingredients

  • 8 oz cream cheese, softened
  • 2 tsp vanilla extract
  • ¼ cup unsalted butter, softened
  • ½ cup powdered sugar
  • 2 Tbsp heavy cream

Strawberry Cookie Crumble Ingredients

  • 20 Golden Oreo cookies
  • 4 Tbsp unsalted butter, melted
  • 4 Tbsp strawberry Jell-O mix

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350º F. Line an 8×8 inch baking dish with parchment paper and set aside to ensure easy removal of the brownies later.
  2. Make Strawberry Brownie Batter: In a large mixing bowl, combine the strawberry cake mix, eggs, strawberry Jell-O mix, and melted butter. Mix thoroughly until the batter is smooth and free of lumps.
  3. Bake the Brownies: Pour the batter into the prepared baking dish and spread it evenly using a spatula or clean hands. Bake in the preheated oven for 25 minutes or until a toothpick inserted in the center comes out clean. Avoid over-baking to keep moistness.
  4. Cool the Brownies: Remove the brownies from the oven and allow them to cool completely on a wire rack for about 30 minutes. Once cooled, lift them out of the pan using the parchment paper. Trim the tops to even the brownies if needed.
  5. Prepare Cheesecake Frosting: In a medium mixing bowl, beat together softened cream cheese, vanilla extract, and softened butter using a hand or stand mixer until smooth and combined.
  6. Add Powdered Sugar and Cream: Add the powdered sugar and heavy cream to the cream cheese mixture. Beat again until the frosting is fluffy and smooth in texture.
  7. Frost the Brownies: Spread the cheesecake frosting evenly over the cooled brownies, covering them edge to edge with a spatula.
  8. Make Strawberry Cookie Crumble: Crush the Golden Oreo cookies into fine and chunky crumbs using a food processor, rolling pin, or by hand.
  9. Coat Crumbs with Butter and Jell-O: In a large ziplock bag, combine the cookie crumbs, melted butter, and strawberry Jell-O powder. Seal the bag and shake until all crumbs are completely coated.
  10. Top the Brownies: Sprinkle the coated Oreo crumb mixture evenly over the frosted brownies. Lightly press the crumble into the frosting for better adhesion.
  11. Serve: Cut the brownies into 16 squares and serve immediately or store appropriately.
  12. Storage: Store brownies in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze frosted brownies cut into squares for up to 4 weeks; add the cookie crumble topping after thawing for best texture.

Notes

  • Do not overbake brownies to maintain moistness and avoid dryness.
  • Ensure cream cheese and butter are softened for smooth frosting mixing.
  • For easier cleanup and removal, always line your baking dish with parchment paper.
  • Adding the cookie crumble topping after freezing and thawing preserves its crunchiness.
  • Use fresh strawberry Jell-O mix for the best flavor punch in both brownie and topping layers.
