Description

This Strawberry Cheesecake Quesadilla is a quick and delicious dessert combining creamy sweetened cream cheese with fresh strawberries, sandwiched between crispy buttered tortillas. Finished with a cinnamon sugar sprinkle, this treat is perfect for a light dessert or indulgent snack.


Ingredients

Filling

  • 1/2 cup Cream Cheese (softened)
  • 2 tbsp Sugar
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Strawberries (diced)

Quesadilla

  • 4 Tortillas (6 inch)
  • 2 tbsp Butter (softened)
  • 1 tsp Sugar
  • 1/2 tsp Cinnamon


Instructions

  1. Prepare Cream Cheese Mixture: Add the softened cream cheese, 2 tablespoons sugar, and vanilla extract to a mixing bowl. Beat together until smooth and creamy to create a sweet cheesecake filling.
  2. Fold in Strawberries: Dice the strawberries and gently fold them into the cream cheese mixture until evenly combined without breaking up the fruit.
  3. Spread Mixture on Tortilla: Take one tortilla and spread half of the strawberry cream cheese mixture evenly over it, covering the surface.
  4. Heat Butter in Pan: Add 1 teaspoon of butter to a pan and heat it over medium-high heat until melted and lightly sizzling.
  5. Cook First Tortilla: Place the prepared tortilla cream cheese side up in the pan.
  6. Prepare Top Tortilla: Spread 1 teaspoon of softened butter on one side of the second tortilla, then lay it butter side up on top of the cream cheese layer in the pan.
  7. Cook Quesadilla: Cook the quesadilla for 2 to 3 minutes on one side until crispy and golden brown. Carefully flip and cook the other side for another 2 to 3 minutes until equally crispy.
  8. Add Cinnamon Sugar: Mix together the 1 teaspoon sugar and 1/2 teaspoon cinnamon, then sprinkle this evenly over the cooked quesadilla while still hot.
  9. Repeat and Serve: Repeat the process for the second quesadilla or cook both simultaneously on a griddle. Remove from heat, let sit for 2 minutes to set, then slice into wedges and serve with strawberry sauce or fresh strawberries on the side.
