Description
A refreshing and nutritious Strawberry Chia Pudding recipe combining creamy coconut milk, sweet strawberries, and fiber-rich chia seeds for a delicious and healthy breakfast or snack option.
Ingredients
Chia Pudding Base
- ½ cup chia seeds (divided)
- 2 cups coconut milk (divided)
- Maple syrup to taste
Strawberry Mixture
- 1 cup fresh strawberries
- 2 Tablespoons water
- 1 Tablespoon strawberry preserves
Garnish
- ½ cup fresh strawberries, sliced
Instructions
- Mix chia pudding base: In two separate 10-12 ounce containers, add ¼ cup chia seeds and 1 cup coconut milk each. Add maple syrup to taste, then whisk thoroughly to combine the ingredients evenly.
- Prepare strawberry puree: Place the fresh strawberries, water, and strawberry preserves into a blender. Pulse the mixture until it becomes smooth and well-blended.
- Combine mixtures: Pour half of the blended strawberry mixture evenly over each of the chia puddings in the containers, layering the flavors.
- Chill: Refrigerate the containers for at least 3 hours or up to overnight to allow the chia seeds to absorb the liquid and the pudding to thicken.
- Garnish and serve: Before serving, top each pudding with sliced fresh strawberries for added texture and freshness. Enjoy immediately or store in an airtight container in the fridge for up to 4-5 days.
