Description

A refreshing and nutritious Strawberry Chia Pudding recipe combining creamy coconut milk, sweet strawberries, and fiber-rich chia seeds for a delicious and healthy breakfast or snack option.

Ingredients

Chia Pudding Base

  • ½ cup chia seeds (divided)
  • 2 cups coconut milk (divided)
  • Maple syrup to taste

Strawberry Mixture

  • 1 cup fresh strawberries
  • 2 Tablespoons water
  • 1 Tablespoon strawberry preserves

Garnish

  • ½ cup fresh strawberries, sliced

Instructions

  1. Mix chia pudding base: In two separate 10-12 ounce containers, add ¼ cup chia seeds and 1 cup coconut milk each. Add maple syrup to taste, then whisk thoroughly to combine the ingredients evenly.
  2. Prepare strawberry puree: Place the fresh strawberries, water, and strawberry preserves into a blender. Pulse the mixture until it becomes smooth and well-blended.
  3. Combine mixtures: Pour half of the blended strawberry mixture evenly over each of the chia puddings in the containers, layering the flavors.
  4. Chill: Refrigerate the containers for at least 3 hours or up to overnight to allow the chia seeds to absorb the liquid and the pudding to thicken.
  5. Garnish and serve: Before serving, top each pudding with sliced fresh strawberries for added texture and freshness. Enjoy immediately or store in an airtight container in the fridge for up to 4-5 days.

Notes

  • Adjust maple syrup amount according to your preferred sweetness level.
  • Use full-fat coconut milk for creamier texture, or light coconut milk for fewer calories.
  • Ensure chia seeds are well mixed to avoid clumping.
  • Storage: Keep refrigerated and consume within 4-5 days for best freshness.
  • Can substitute strawberry preserves with other berry jams for flavor variations.
