Description

This luscious Strawberry Fudge recipe combines creamy white chocolate with condensed milk and a burst of strawberry flavor, enhanced by delicate freeze-dried strawberry pieces. Perfectly sweet and creamy, this no-bake fudge sets in the fridge and makes a delightful treat for any occasion.

Ingredients

Fudge Base

  • 550 g White chocolate
  • 397 g Condensed milk
  • 100 g Icing sugar

Flavoring and Toppings

  • Pink food colouring (quantity to desired shade)
  • 7 drops Strawberry flavouring (LorAnn recommended, adjust to taste)
  • 18 g Freeze dried strawberry pieces

Instructions

  1. Prepare the Tin: Line an 8″ square tin with greaseproof paper, greasing the tin lightly with butter first to help the paper stick securely.
  2. Melt Chocolate and Condensed Milk: Combine the condensed milk and white chocolate in a pan over low heat. Stir continuously until the mixture is fully melted and smooth.
  3. Add Sugar, Colouring, and Flavoring: Remove the pan from heat and stir in the icing sugar, pink food coloring to your preferred shade, and the strawberry flavoring. Start with 7 drops of LorAnn flavoring or adjust according to the instructions and taste preference.
  4. Pour and Smooth: Pour the prepared fudge mixture into the lined tin and evenly smooth out the surface.
  5. Add Toppings: Sprinkle the freeze-dried strawberry pieces evenly over the fudge and gently press them into the mixture with your hand to ensure they adhere.
  6. Chill to Set: Place the tin in the fridge for at least 3-4 hours, preferably overnight, to allow the fudge to set firmly.
  7. Slice and Store: Once fully set, remove the fudge from the tin using the greaseproof paper and cut it into 36 pieces. Store the fudge in the fridge and consume within 2-3 weeks for best freshness.

Notes

  • Adjust strawberry flavouring according to the specific brand instructions and personal taste preferences.
  • Ensure low heat when melting chocolate and condensed milk to prevent scorching.
  • Freeze-dried strawberries add texture and a concentrated strawberry flavor—do not substitute with fresh strawberries.
  • Keep fudge refrigerated to maintain texture and prolong shelf life.
