- Heat the Cream: Pour the heavy cream into a small saucepan and heat over medium heat until it is steaming but not boiling, to avoid scalding.
- Melt Chocolate: Immediately pour the hot cream over the chopped dark chocolate and instant espresso powder. Let it sit untouched for 1 minute to soften the chocolate, then stir gently until you achieve a smooth, fully melted ganache.
- Add Butter: Stir in the unsalted butter until fully incorporated, adding silkiness and shine to the ganache.
- Chill the Ganache: Pour the ganache mixture into the prepared baking dish, gently tap to level the surface, and refrigerate for at least 8 hours or overnight until fully firm.
- Cut the Ganache: Once firm, lift the ganache slab out using the parchment overhang. Dip a sharp knife in hot water, wipe it dry, and cut the ganache into 8×8-inch slices. Then, further cut each slice into 64 small square truffles.
- Prepare Strawberry Powder: Grind the freeze-dried strawberries in a food processor or spice grinder to create a fine powder.
