A refreshing and visually stunning Strawberry Matcha Boba drink that combines the earthy flavor of ceremonial grade matcha with sweet, chewy tapioca pearls and fresh strawberry puree. This beverage blends creamy milk with vibrant layers, perfect for a unique treat at home.
Ingredients
Tapioca Pearls and Syrup
- 50 g tapioca pearls
- 25 g brown sugar
Strawberry Layer
- 3 large strawberries (roughly diced)
Milk and Matcha
- 300 g milk (dairy or non-dairy)
- 1 teaspoon matcha powder (ceremonial grade)
- 55 g hot water
- Ice (to fill halfway in glass)
Instructions
- Cook Tapioca Pearls: Bring a small pot of water to a boil. Once boiling, add all the tapioca pearls at once, stirring to prevent clumping. Boil for 15 minutes until soft and chewy.
- Set Tapioca Pearls: Cover the pot, remove it from heat, and let the pearls sit for an additional 15 minutes to finish cooking.
- Prepare Tapioca Syrup: Drain the pearls and transfer them to a small bowl. Stir in the brown sugar until it dissolves into a syrup coating the pearls. Set aside.
- Muddle Strawberries: In a serving glass, add diced strawberries and use a muddler, wooden spoon, or flat end of a rolling pin to crush them into a rough puree, releasing their juices.
- Add Tapioca Pearls: Add the cooked tapioca pearls along with their brown sugar syrup to the glass over the muddled strawberries.
- Combine Milk and Ice: Fill the glass halfway with ice, then pour milk until the glass is about 3/4 full. Stir gently to blend the strawberry puree with the milk and to loosen the tapioca pearls while keeping a layered effect if desired.
- Whisk Matcha: In a chawan or small bowl, sift the matcha powder, add hot water, and whisk vigorously using a bamboo whisk in an ‘M’ motion for 15 seconds until frothy and smooth.
- Layer Matcha: Carefully pour the prepared matcha over the strawberry milk layer to create a distinct top layer. Serve immediately, advising to stir well before drinking for a harmonious flavor blend.
