Description

These delicate Strawberry Tartlets feature flaky puff pastry topped with sweetened strawberries infused with rosewater, finished with a dusting of powdered sugar and aromatic dried rose petals. Perfect for an elegant dessert or teatime treat, they bake to golden, puffed perfection in just 20 minutes.

Ingredients

Puff Pastry Base

  • 1 sheet puff pastry

Strawberry Topping

  • 1 pint strawberries
  • 1/4 cup granulated sugar
  • 1/4 teaspoon rosewater

Finishing Touches

  • 1 tablespoon powdered sugar
  • 1 teaspoon dried crushed rose petals

Instructions

  1. Preheat the oven: Set your oven to 400 degrees Fahrenheit to ensure it’s fully heated for baking the tartlets.
  2. Prepare the strawberries: Slice the strawberries into rounds and toss them with granulated sugar and rosewater in a small mixing bowl. Let this mixture rest for at least five minutes to macerate and develop flavor.
  3. Cut the puff pastry: Using a 3 1/2 inch wide cookie cutter, cut the puff pastry sheet into 12 heart shapes, or alternatively cut into 10 to 12 rectangles for tart bases.
  4. Assemble tartlets: Place the puff pastry shapes on a parchment-lined baking sheet. Top each with the sliced strawberries, shaking off any excess sugar or moisture to avoid soggy pastry. Keep about a 1/4 inch border free from berries for the edge to puff.
  5. Bake: Bake the tartlets in the preheated oven for 15 to 20 minutes, until the pastry edges are golden brown and puffed up beautifully.
  6. Cool and finish: Remove the tartlets from the oven and let them cool for 2 to 3 minutes. Dust the tops with powdered sugar and sprinkle with dried crushed rose petals before serving.

Notes

  • For best results, keep the puff pastry cold until you are ready to cut it to ensure maximum puff.
  • Rosewater adds a floral aroma that complements the strawberries—adjust quantity to taste or omit if preferred.
  • Serve the tartlets slightly warm or at room temperature.
  • Tartlets can be stored covered at room temperature for up to 1 day but are best enjoyed fresh.
