This Stuffed Philly Cheesesteak Meatloaf is a hearty and flavorful twist on classic meatloaf, packed with sautéed onions, bell peppers, mushrooms, and garlic, layered with thick-cut mozzarella cheese. Baked to perfection with a melty cheese center and topping, it’s a comforting meal perfect for family dinners or gatherings.


Ingredients

Meatloaf Mixture

  • 1 ½ pounds ground beef
  • 1 large onion, finely chopped
  • 1 green bell pepper, finely chopped
  • ½ cup mushrooms, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ cup whole milk
  • 1 cup breadcrumbs (regular, Italian-style, or panko)
  • 1 large egg
  • ½ teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon Adobo seasoning
  • 3 tablespoons Worcestershire sauce

Cheese Filling & Topping

  • 8 slices VERY thick-cut mozzarella cheese
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C). Lightly grease a loaf pan using nonstick spray, butter, or a drizzle of olive oil to prevent sticking.
  2. Cook the vegetables: Heat olive oil in a medium skillet over medium heat. Add finely chopped onions, green bell peppers, mushrooms, and minced garlic. Sauté for 5 to 7 minutes until the vegetables soften and become fragrant. Remove from heat and allow to cool slightly.
  3. Mix the meatloaf base: In a large mixing bowl, combine ground beef, whole milk, breadcrumbs, egg, salt, black pepper, garlic powder, onion powder, Adobo seasoning, Worcestershire sauce, and the sautéed vegetables. Gently mix with clean hands until just combined to keep the meatloaf tender.
  4. Assemble the first layer: Place half of the meat mixture into the prepared loaf pan. Press gently to form an even layer, ensuring the mixture is compacted but not overworked.
  5. Add the cheese filling: Arrange 4 very thick slices of mozzarella cheese evenly over the meat layer, forming a delicious cheesy center.
  6. Top with remaining mixture: Spread the remaining meat mixture over the cheese layer, pressing lightly to seal the edges. Reserve the last 4 slices of mozzarella cheese for the topping.
  7. Bake: Place the assembled meatloaf in the preheated oven. Bake for 30 minutes to begin cooking through.
  8. Add the topping: Remove the loaf from the oven and carefully place the remaining 4 slices of mozzarella on top. Optionally sprinkle fresh parsley over the cheese. Return the meatloaf to the oven and bake for another 10 to 15 minutes, or until the cheese has melted, is bubbly, and has slightly crispy edges.
  9. Rest and serve: Allow the meatloaf to rest for 5 to 10 minutes after baking to let the juices redistribute. Slice generously and serve warm for a satisfying meal.

  • Use very thick-cut mozzarella slices for a rich, gooey cheese center and topping.
