Description

This Easy Cold Strawberry Soup is a refreshing and delightful summer treat that combines the sweetness of ripe strawberries with a hint of citrus and creamy yogurt. Perfect for a light dessert or a cooling snack on a hot day.


Ingredients

For the Strawberry Soup:

  • 4 cups fresh ripe strawberries, washed, stems removed and halved
  • 1 cup vanilla or strawberry yogurt
  • 1/4 cup orange juice
  • 1/4 tsp vanilla
  • 1/2 Tbsp sugar (optional)
  • sprinkle of ground ginger (optional)
  • fresh mint (optional)

Instructions

  1. Prepare the Soup Base: Place the hulled and halved strawberries into a blender.
  2. Blend: Add yogurt, orange juice, vanilla, and sugar if desired. Blend until smooth and creamy.
  3. Chill: Refrigerate the soup for about two hours to chill.
  4. Serve: Ladle the soup into individual bowls. Garnish with a dollop of yogurt or whipped cream. Sprinkle with ground ginger and top with mint leaves, if desired.
