Ingredients
Apple Filling
- 2 tablespoons unsalted butter
- 3 cups apples (about 2 large honey crisp apples), peeled, cored, and finely diced
- ⅓ cup brown sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- ⅛ teaspoon ginger
- ⅛ teaspoon nutmeg
- 1 teaspoon vanilla extract
Pastry & Assembly
- 1 (17.3 ounce) package frozen puff pastry sheets (thawed)
- 1 egg white (for egg wash)
- About 1 tablespoon water (for egg wash)
Vanilla Glaze
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Prepare the Apple Filling: Preheat your oven to 375ºF (190ºC). Melt the butter in a large skillet over medium heat. Add the diced apples and cook for about 3 minutes, stirring occasionally to soften. Then add the brown sugar, all-purpose flour, lemon juice, cinnamon, ginger, and nutmeg. Continue cooking and stirring for an additional 3 minutes until the apples are tender and the sauce thickens. Remove from heat and stir in 1 teaspoon vanilla extract. Allow the filling to cool completely.
- Prepare the Puff Pastry: While the apple filling cools, unfold one sheet of thawed puff pastry onto a piece of parchment paper. Keep the second sheet refrigerated until ready to use. Pinch any seams together if necessary. Using a sharp knife, cut the pastry sheet into four equal squares.
- Assemble the Turnovers: In a small bowl, mix the egg white with about 1 tablespoon of water to create an egg wash. Lightly brush the edges of each puff pastry square with this egg wash. Spoon approximately 2 tablespoons of the cooled apple filling into the center of each square. Fold each square diagonally over the filling to form a triangle and firmly seal the edges by pressing with a fork.
- Bake the Turnovers: Lightly brush the tops of the sealed turnovers with additional egg wash. Place them on a baking sheet lined with parchment paper. Repeat the assembly process with the remaining puff pastry sheet and filling. Bake in the preheated oven for 20 to 25 minutes, or until the turnovers have puffed up and turned a light golden brown. Remove from the oven and transfer to a wire rack, allowing them to cool for 10 minutes.
- Prepare and Add the Glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until the glaze is smooth and thick but pourable. Drizzle this glaze over the cooled turnovers. Serve warm for the best taste experience and enjoy your homemade apple turnovers!
Notes
- Use firm, sweet apples like Honeycrisp or Granny Smith for the best texture and flavor.
- Allow the apple filling to cool before filling the pastry to avoid soggy crusts.
- If puff pastry is not available, a pie crust can be used but the texture will be different.
- Store leftover turnovers in an airtight container at room temperature for up to two days or freeze before glazing for longer storage.
- The glaze can be omitted or substituted with a simple dusting of powdered sugar for a lighter finish.
