Ingredients

Chicken & Marinade

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch

For Cooking

  • 1 tablespoon minced garlic

Instructions

  1. Marinate Chicken: In a medium bowl, whisk together the sweet chili sauce, soy sauce, and cornstarch until smooth. Add the chicken pieces and toss thoroughly to coat. Let the mixture marinate for 15 minutes while you prepare the other ingredients.
  2. Cook Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the marinated chicken pieces (shake off excess marinade, reserving it for later), and cook for about 7-10 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté Vegetables: In the same skillet, add the minced garlic and ginger, stirring for about 30 seconds until fragrant. Add in the sliced bell pepper and broccoli florets, season with salt and pepper, and sauté for 5-7 minutes until the vegetables are just tender but still crisp.
  4. Combine: Return the cooked chicken to the skillet along with any reserved marinade. Stir to combine and cook for an additional 2-3 minutes until everything is heated through and the sauce is slightly thickened, coating the chicken and vegetables.
