  • 1 small sweet potato, chopped small
  • 1 small onion, chopped
  • 1 bunch lacinato kale
  • 1 cup mushrooms, sliced
  • 2 teaspoons lime juice
  • ½ teaspoon smoked paprika
  • ½ teaspoon chilli powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1/8 teaspoon cayenne pepper
  • 2 large eggs
  • Salt and pepper, to taste

Optional Garnishes

  • Sriracha Hot Sauce, for serving
  • Lime juice, for serving
  • ½ avocado, sliced, for serving


Instructions

  1. Heat the skillet: Place a cast iron or non-stick pan over medium heat to warm up.
  2. Melt the coconut oil: Add 1 to 2 tablespoons of coconut oil to the pan and allow it to melt evenly.
  3. Cook sweet potatoes and veggies: Add the chopped sweet potato, onion, and sliced mushrooms to the pan. Let them cook undisturbed for 4-5 minutes to start softening and browning.
  4. Season and continue cooking: Stir the vegetables, season with salt and pepper, then cook for another 4-5 minutes until the sweet potatoes are tender.
  5. Add kale: Stir in the kale and cook for about one minute until it wilts down.
  6. Incorporate lime juice and spices: Add 2 teaspoons lime juice along with smoked paprika, chili powder, cumin, garlic powder, onion powder, and cayenne pepper. Stir and cook for one minute to develop the flavors.
  7. Prepare for eggs: If pan looks dry, add a splash of water to create steam. Make two wells in the mixture and carefully crack the eggs into them. Season the eggs with salt and pepper.
  8. Cook the eggs: Cover the pan with a lid and cook the eggs for about 3-4 minutes for runny yolks or longer if preferred.
  9. Serve and garnish: Plate the skillet and garnish with additional lime juice, sliced avocado, and Sriracha hot sauce as desired.
