Ingredients

- 1 lb ground beef
- 2 ½ cups beef broth
Vegetables
- ½ cup white onion, diced
- 1 red pepper, diced

- 16 oz macaroni noodles (uncooked)
- 2 cups cheddar cheese, shredded

- 16 oz mild salsa
Instructions
- Brown the ground beef: In a stockpot or Dutch oven, cook the ground beef over medium heat until it is fully browned and cooked through. Drain excess fat if necessary, then remove the beef from the pan and set aside.
- Sauté the vegetables: In the same pot, add the diced white onion and red pepper. Cook for 3-5 minutes, stirring occasionally, until the vegetables have softened and become fragrant.
- Add the broth and boil: Pour in the beef broth and bring the mixture to a boil over high heat, preparing the liquid base for the pasta.
- Cook the pasta: Add the uncooked macaroni noodles to the boiling broth. Reduce heat slightly and cook until the pasta is al dente, about 7-8 minutes, stirring occasionally to prevent sticking.
- Remove from heat: Once the pasta is tender yet firm, take the pot off the heat to stop the cooking process.
- Combine and mix: Stir the cooked ground beef back into the pot along with the shredded cheddar cheese and mild salsa. Mix thoroughly until the cheese is melted and all ingredients are well combined.
- Serve: Dish out the taco pasta warm, optionally topping with sliced avocado, sour cream, or your favorite taco-inspired garnishes for extra flavor and texture.
