Ingredients
Meat
- 1 Pound ground beef (or sausage, cooked and drained)
Base
- 2 Cans refried beans
- 8 Ounces cream cheese (softened)
- 1 Cup sour cream
- 1 Envelope taco seasoning
- 1 Can green chilies (diced)
Cheese
- 1 Cup Cheddar cheese (shredded)
- 1 Cup Monterey Jack cheese (shredded)
Toppings
- Jalapeños (sliced)
- Black olives (sliced)
- Fresh cilantro
Serve with
- Tortilla chips
Instructions
- Preheat the oven: Preheat your oven to 350°F to get it ready for baking the dip.
- Prepare the bean mixture: In a large mixing bowl, combine the refried beans, softened cream cheese, sour cream, taco seasoning, and diced green chilies. Stir well until the mixture is smooth and evenly blended.
- Add meat and cheese: Stir in the cooked and drained ground beef (or sausage) and about three-quarters of the shredded cheddar and Monterey Jack cheeses into the bean mixture, mixing thoroughly.
- Spread in baking dish: Transfer the mixture evenly into a baking dish and then sprinkle the remaining cheese over the top to create a cheesy crust.
- Bake: Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the dip is hot, bubbly, and melted throughout.
- Cool slightly: Remove the dip from the oven and let it cool for 5 to 10 minutes to allow it to set slightly and to avoid burning your mouth.
- Add toppings and serve: Garnish the dip with sliced jalapeños, black olives, and fresh cilantro to add brightness and extra flavor. Serve warm with tortilla chips for dipping.
Notes
- Use ground sausage instead of beef for a different flavor profile.
- For a spicier kick, add more jalapeños or a dash of hot sauce into the dip mixture.
- Softening the cream cheese beforehand ensures easier mixing and a smoother texture.
- This dip can be prepared ahead and refrigerated; bake just before serving.
- For a lighter version, substitute sour cream with Greek yogurt.
