Description

Tomato Coconut Curried Cod is a vibrant and creamy seafood dish that combines tender fresh cod simmered in a rich coconut milk and tomato curry sauce, infused with fragrant spices, garlic, and fresh cilantro. This comforting yet light meal is simple to prepare in just 30 minutes, perfect for a wholesome weeknight dinner.

Ingredients

For the Curry Base

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 5 cloves garlic, minced
  • 1.5 tablespoons curry powder
  • 2 pints cherry or grape tomatoes
  • 1 cup vegetable stock
  • 1 can (14 oz) full fat coconut milk
  • Kosher salt, to taste
  • Fresh cracked black pepper, to taste

For the Cod

  • 1 pound fresh cod fillets

For Garnish and Finishing

  • 1/2 cup freshly chopped cilantro, plus more for garnish
  • 1 tablespoon fresh squeezed lime juice

Instructions

  1. Heat olive oil: In a large sauté pan with at least 2-inch high sides, heat 1 tablespoon of olive oil over medium heat to prepare the base of the curry.
  2. Sauté onions: Add the diced yellow onion to the pan with a pinch of kosher salt and fresh cracked black pepper. Cook for 3-4 minutes, stirring frequently until the onions soften and become translucent.
  3. Add garlic: Stir in the minced garlic cloves and cook for an additional minute, stirring continuously to avoid burning and to release the garlic’s aroma.
  4. Add tomatoes and spices: Pour in the cherry or grape tomatoes, 1.5 tablespoons of curry powder, 1 cup of vegetable stock, and 1 can of full fat coconut milk. Add a generous pinch of salt and pepper to season the sauce.
  5. Simmer curry base: Cover the pan with a tight-fitting lid, increase the heat slightly, and let the curry simmer gently for 10 minutes to meld the flavors and soften the tomatoes.
  6. Cook the cod: Nestle the fresh cod fillets into the simmering curry sauce. Cover the pan again and cook for 7-10 minutes more, or until the fish is cooked through and easily flakes with a fork.
  7. Finish with herbs and lime: Stir in the 1/2 cup of freshly chopped cilantro and 1 tablespoon of fresh lime juice to brighten up the flavors immediately before serving.
  8. Garnish and serve: Garnish the dish with additional chopped cilantro and enjoy this flavorful, comforting curry while warm.

Notes

  • Use fresh cod fillets for the best texture and flavor; you can substitute with other white fish if desired.
  • If you prefer a spicier curry, consider adding a pinch of cayenne pepper or a chopped chili when adding the curry powder.
  • Serve with steamed rice or warm naan bread to soak up the delicious sauce.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat gently to avoid fish breaking apart.
