Ingredients

Wet Ingredients

  • 1/2 cup mashed banana (roughly 1 banana)
  • 1/2 cup cashew or almond butter
  • 2 eggs
  • 3/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup

Dry Ingredients

  • 2 cups gluten free rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of sea salt

Fruits

  • 1/2 cup blueberries
  • 1/2 cup blackberries
  • 1/2 cup raspberries


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the oatmeal cups.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the mashed banana, almond milk, almond butter, eggs, maple syrup, and vanilla extract until the mixture is smooth and well combined.
  3. Add Dry Ingredients: Add the gluten free rolled oats, baking powder, sea salt, and cinnamon to the wet mixture. Stir everything together until fully incorporated.
