Description

These Turkey Pinwheel Sandwiches are a quick, delicious, and easy-to-make appetizer or snack. Featuring soft lavash bread rolled with a creamy ranch-flavored spread, lean turkey breast, cheddar cheese, and fresh butter lettuce, they offer a perfect balance of flavors and textures. Ideal for parties, lunchboxes, or casual get-togethers, these pinwheels require no cooking and come together in just 15 minutes.

Ingredients

Bread and Spread

  • 4 large sheets lavash bread or flatbread
  • 4 oz reduced fat cream cheese (softened)
  • ¼ cup plain full fat Greek yogurt
  • 1 ½ Tablespoons ranch seasoning mix

Fillings

  • 8 oz sliced turkey breast
  • 8 slices cheddar cheese or American cheese
  • 1 cup butter lettuce
  • Optional veggies: tomato slices, bell pepper, carrot or cucumber matchsticks
  • Salt and pepper (to taste)

Instructions

  1. Make spread: In a small bowl, thoroughly mix the softened cream cheese, Greek yogurt, and ranch seasoning mix until smooth and well combined.
  2. Spread: Evenly spread a generous portion of the ranch yogurt mixture over each lavash bread sheet, making sure to leave a small border around the edges for easier rolling.
  3. Add fillings: Layer a few slices of turkey breast over the spread on each lavash sheet. Next, add two slices of reduced-fat cheddar or American cheese per sheet. Top with fresh butter lettuce leaves and, if desired, add tomato slices or vegetable matchsticks. Lightly season with salt and pepper to taste.
  4. Roll: Starting from one edge, tightly roll up each lavash sheet into a log shape to keep the fillings secure.
  5. Cut: Using a sharp knife, slice each rolled lavash log into 1-inch thick pinwheel pieces.
  6. Serve: Arrange the pinwheels neatly on a serving platter and enjoy immediately or refrigerate until ready to serve.

Notes

  • Customize with your favorite deli meats or substitute with vegetarian alternatives for a different twist.
  • For best results, chill the pinwheels for 15-20 minutes before slicing to help them hold their shape.
  • Use reduced-fat cheese and yogurt to keep the snack lighter without sacrificing flavor.
  • These pinwheels are great for meal prep and can be stored in an airtight container in the refrigerator for up to 2 days.
  • Feel free to add a bit of fresh herbs like dill or chives into the spread for extra flavor.
