  • 1/32 cup vegetable oil (approx. 1 tablespoon)
  • Gel food coloring: pink, blue, purple

Frosting

  • 1 cup butter, softened (2 sticks)
  • 1 teaspoon vanilla extract
  • 5-6 cups powdered sugar
  • 3 tablespoons half and half
  • Gel food coloring: pink, blue, purple (for tinting frosting)

Instructions

  1. Preheat and prepare pans: Preheat your oven to 350°F (175°C) and grease three 6-inch cake pans thoroughly to prevent sticking.
  2. Mix cake batter: In a large mixing bowl, combine the vegetable oil, egg whites, French vanilla cake mix, water, and bubblegum flavoring. Mix until smooth and well combined.
  3. Divide and color batter: Separate the batter evenly into three bowls. Add two drops of pink gel food coloring to the first bowl, two drops of purple to the second, and two drops of blue to the third. Stir each gently until the color is uniform.
  4. Bake the layers: Pour each colored batter into the prepared cake pans. Bake in the preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool cakes: Remove the cakes from the oven and allow them to cool completely on a wire rack before frosting to ensure a smooth finish.
  6. Prepare frosting: Beat the softened butter in a large bowl until smooth and creamy. Gradually add powdered sugar, about a cup at a time, alternated with vanilla extract and half and half until desired creamy texture is achieved.
  7. Divide frosting: Separate the frosting into two portions, reserving two-thirds for the base coat and one-third for decorating the mane.

  10. Pipe mane decorations: Load each colored frosting into piping bags fitted with tips 17, 21, or 70. Pipe swirls, stars, and flowers on top and along one side to create a vibrant unicorn mane effect.
  11. Assemble unicorn features: Press the horn and ears gently into the top of the cake to secure them. Attach eyelashes delicately on the side for added detail.
  12. Finish cake border: Using Wilton tip 17, pipe a decorative border around the cake base to complete the look.
