Instructions
- Prepare ingredients: Drain and rinse the can of chickpeas thoroughly. Melt 1 cup of vegan dark chocolate chips either in the microwave or over a double boiler on the stovetop until smooth.
- Blend mixture: Add the drained chickpeas, 1/2 cup of nut or seed butter, and melted dark chocolate into a food processor or blender. Blend for 45 to 60 seconds until the ingredients are well combined and form a smooth batter.
- Form truffles: Use a cookie scoop to portion out the batter onto a baking sheet lined with parchment paper. Freeze the scooped batter for 15-20 minutes to help them firm up. Remove, roll into smooth balls, then return to the freezer for another 10 minutes.
- Melt extra chocolate: While the truffles firm up, melt an additional amount of vegan dark chocolate for dipping. Remove the truffles from the freezer and coat them thoroughly with the melted chocolate. Place back on the parchment-lined baking sheet and freeze again to harden completely.
- Add toppings: Optionally, garnish the coated truffles with cacao nibs, goji berries, sprinkles, shredded coconut, nuts/seeds, or freeze-dried fruits before returning them to the freezer for the last hardening.
- Store and serve: Once hardened, store the truffles in the refrigerator. They can be enjoyed within 7-10 days refrigerated or 30-60 days if frozen.
