Ingredients

Sushi Base

  • 1 ½ Cups Cooked Rice
  • 3 Sheets Nori, cut into 12 squares

Shrimp Mixture

  • 1 Pound Shrimp, peeled, deveined, uncooked, and chopped into small pieces
  • 1 Pinch Sea Salt
  • ½ Cup Softened Cream Cheese
  • 3 Tablespoons Kewpie Mayo
  • 1 Teaspoon Sriracha
  • 2 Tablespoons Soy Sauce or Coconut Aminos

Garnish

  • 1 Tablespoon Chives, chopped
  • Additional spicy mayo for drizzling


Instructions

  1. Prepare the Rice: Cook the rice according to package instructions and set aside to cool slightly.
  2. Preheat Oven: Preheat your oven to 400°F (204°C) to get ready for baking the sushi cups.
  3. Prep the Shrimp: Peel, devein, and pat dry the shrimp, then chop into small pieces. Season with a pinch of sea salt and set aside.
  4. Make the Sauce: In a bowl, mix together the softened cream cheese, Kewpie mayo, sriracha, and soy sauce or coconut aminos until smooth. If needed, microwave for 20 seconds to soften the cream cheese for easier mixing.

  6. Prepare Nori Cups: Cut nori sheets into squares and place one square into each cavity of a muffin tin, forming small cups.
