Description

A flavorful and easy-to-make baked dumpling dish inspired by Trader Joe’s viral recipe, featuring chicken dumplings baked in a creamy red Thai curry sauce with spinach and garlic for a comforting meal.

Ingredients

Sauce Ingredients

  • 1 can coconut milk (13.5 oz)
  • 1/2 bottle red Thai curry (approx. 7 oz)
  • 3 tbsp soyaki sauce
  • 3 cloves garlic, minced

Main Ingredients

  • Generous amount of fresh spinach (about 4 cups packed)
  • 1 bag frozen chicken dumplings (approx. 12-16 pieces)
  • Chili oil crunch, to taste (for topping)

Instructions

  1. Prepare the sauce: In a baking dish, thoroughly mix together the coconut milk, red Thai curry, soyaki sauce, and minced garlic until smooth and well combined to create a flavorful base.
  2. Add spinach: Spread a generous amount of fresh spinach evenly over the sauce mixture, ensuring it’s well distributed to add freshness and nutrition.
  3. Layer the dumplings: Arrange the frozen chicken dumplings in a single layer on top of the spinach and sauce mixture for even cooking.
  4. Bake: Cover the baking dish tightly with aluminum foil and bake in a preheated oven at 350°F (175°C) for 35-40 minutes, until the dumplings are cooked through and the sauce is bubbling.
  5. Serve: Remove foil, top with chili oil crunch to taste, and serve hot to enjoy the savory, spicy flavors.

Notes

  • Using frozen dumplings directly saves time; no need to thaw before baking.
  • You can adjust the amount of red Thai curry for more or less spiciness.
  • Chili oil crunch adds texture and heat but can be omitted for less spice.
  • Spinach can be substituted with kale or other leafy greens if preferred.
  • Make sure to cover tightly with foil to prevent sauce from drying out during baking.
