Description

Whipped Feta Honey Toast is a quick and delicious appetizer featuring creamy whipped feta cheese blended with tangy Greek yogurt and olive oil, spread over toasted whole-wheat baguette slices, then drizzled with honey and topped with fresh herbs and cracked pepper. This recipe is perfect for an easy snack or party appetizer, combining salty, sweet, and herbaceous flavors in every bite.

Ingredients

Whipped Feta Spread

  • 4 ounces feta cheese in brine, drained and crumbled (about 1 cup)
  • 1/4 cup whole-milk plain strained (Greek-style) yogurt
  • 2 tablespoons extra-virgin olive oil, divided

Toast and Toppings

  • 18 (1/4-inch) slices whole-wheat baguette, lightly toasted
  • 1/2 teaspoon ground pepper
  • 2 tablespoons honey
  • 1 1/2 tablespoons chopped mixed fresh tender herbs (such as chives, dill and flat-leaf parsley)
  • Grated lemon zest for garnish (optional)

Instructions

  1. Prepare the whipped feta spread: Combine the crumbled feta cheese, Greek yogurt, and 1 tablespoon of extra-virgin olive oil in a food processor. Process for 4 to 5 minutes until the mixture is smooth and creamy, stopping every 30 seconds to scrape down the sides to ensure even blending.
  2. Toast the baguette slices: Lightly toast the whole-wheat baguette slices until they are crisp and golden. You can do this in a toaster oven, regular oven, or on a stovetop pan.
  3. Assemble the toasts: Spread a generous amount of the whipped feta mixture evenly over one side of each toasted baguette slice.
  4. Add seasoning and honey: Sprinkle ground pepper over the feta spread, then drizzle each slice with honey to add a touch of sweetness.
  5. Top with herbs and garnish: Sprinkle the chopped fresh herbs on top of each toast. If desired, garnish with grated lemon zest for a bright, citrusy finish.
  6. Finish with olive oil: Drizzle the remaining 1 tablespoon of extra-virgin olive oil over the assembled toasts to enhance flavor and richness. Serve immediately.

Notes

  • To avoid a runny dip, do not overblend the feta mixture; if it becomes too thin, add extra feta to thicken.
  • Whipped feta spread is versatile: use it as a dip for vegetables, crackers, crostini, or naan bread.
  • You can substitute fresh herbs based on availability or preference; mint or basil also work well.
  • Use whole-wheat or white baguette slices according to your preference for a lighter or heartier toast.
  • For a tangier flavor, add a squeeze of fresh lemon juice to the whipped feta spread before blending.
