Ingredients

Truffle Filling

  • 4 oz homemade pistachio butter (1/2 cup, 113 g)
  • 4 oz white chocolate melting wafers (113 g)

Coating & Topping

  • 6 oz white chocolate melting wafers (170 g)
  • Ground pistachio, for sprinkling


Instructions

  1. Melt filling ingredients: Add the pistachio butter and 4 oz of white chocolate to a heatproof bowl. Place the bowl over a simmering pot of water, stirring until the white chocolate and pistachio butter are fully melted and well combined.
  2. Chill the filling: Refrigerate the mixture for 45 minutes to 1 hour until it hardens yet remains workable for shaping the truffles.
  3. Portion truffles: Use a small ice cream scoop to portion the truffle filling into 13 equal pieces. Place them on a parchment-lined baking sheet and refrigerate for 1 hour to firm up.
  4. Melt coating chocolate: In a heatproof bowl over simmering water, melt the remaining 6 oz of white chocolate wafers until smooth and glossy.
  5. Dip and drizzle: Dip the bottom of each truffle into the melted white chocolate, then place it on the tip of a fork. Use a spoon to drizzle melted chocolate over the top to coat completely, letting excess drip off before returning the truffle to the baking sheet.
  6. Decorate: Sprinkle ground pistachios over the freshly coated truffles for added texture and flavor.
  7. Set the truffles: Place the tray back into the refrigerator for 30 minutes to 1 hour to allow the white chocolate coating to harden fully before serving.
