Ingredients
Raspberry Sauce
- 1½ cups fresh raspberries (or defrosted frozen)
- 2 tablespoons sugar
White Chocolate Sauce
- 4 oz white chocolate chips (or chopped white chocolate)
- ½ cup heavy cream
- Pinch of fine salt
Mochas
- 2-4 shots espresso
- Steamed milk of choice
- Whipped cream, optional
- Fresh raspberries, optional
Instructions
- Make Raspberry Sauce: Puree the fresh or defrosted raspberries with sugar in a food processor or blender until completely smooth.
- Strain Raspberry Sauce: Press the raspberry mixture through a fine-mesh strainer to remove seeds for a silky smooth sauce.
- Prepare White Chocolate Sauce: Heat heavy cream over medium heat in a small saucepan until hot but not boiling. Place white chocolate in a heat-safe bowl or measuring cup.
- Combine Chocolate and Cream: Pour the hot cream over the white chocolate and let sit for 30 seconds to soften the chocolate.
- Stir White Chocolate Sauce: Stir the mixture until smooth and all chocolate is fully melted, then add a pinch of fine salt and mix well.
- Prepare Mochas: Brew 2-4 shots of espresso and steam milk of your choice until frothy and hot.
- Assemble Drinks: Add 2 tablespoons each of raspberry puree and white chocolate sauce into each glass and stir to combine.
- Add Espresso and Milk: Pour brewed espresso over the raspberry and chocolate mixture, then top with steamed milk. Stir gently to blend the flavors.
- Garnish and Serve: Optionally, top each mocha with whipped cream and fresh raspberries for added flavor and presentation. Serve immediately.
