Ingredients
Raspberry Sauce
- 1 & 1/2 cups fresh raspberries
- 3 tablespoons granulated sugar

White Chocolate Mousse
- 2 cups heavy cream, divided
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 4 ounces (1 cup) white chocolate chips
Instructions
- Make the sauce: Place 1 & 1/2 cups fresh raspberries, 3 tablespoons granulated sugar, and 1 & 1/2 teaspoons lemon juice in a small saucepan. Bring to a simmer over medium-high heat, gently mashing the raspberries with the back of a wooden spoon to release their juice and cook down slightly.
- Strain the sauce: Transfer the raspberry mixture to a fine-mesh sieve or strainer set over a bowl. Press the mixture firmly to extract all the juice, leaving behind seeds and pulp. Place the strained liquid in the refrigerator to chill thoroughly.
- Prepare the whipped cream base: In a large bowl, combine 1 & 3/4 cups of heavy cream, 3 tablespoons powdered sugar, and 1 teaspoon vanilla extract. Using a handheld electric mixer, beat the mixture until stiff peaks form, about 2-3 minutes. Be careful not to overwhip to avoid clumping.
- Melt the white chocolate: In a medium microwave-safe bowl, combine 1 cup white chocolate chips with 1/4 cup heavy cream. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
- Combine mousse components: Fold 1 cup of the whipped cream gently into the melted white chocolate to lighten it. Then, carefully fold in the remaining whipped cream until the mousse is uniformly combined and fluffy.
- Assemble the parfaits: Spoon half of the white chocolate mousse evenly into six small tumblers or serving glasses. Top each with 1 tablespoon of the chilled raspberry sauce and a few fresh raspberries. Repeat with another layer of mousse, raspberry sauce, and raspberries. Optionally, garnish with shaved white chocolate for extra elegance.
- Chill and serve: Refrigerate the parfaits for at least 2 hours to allow flavors to meld and the dessert to set. Serve chilled and enjoy this creamy, fruity treat.
