This White Chocolate Rocky Road recipe is a delightful and easy no-bake treat combining creamy white chocolate with crunchy pistachios, chewy marshmallows, sweet glacé cherries, and a hint of coconut. Ingredients
Chocolate Mixture
- 500g (1 lb) white chocolate melts, discs, chips, or chopped block
- 2 tbsp grapeseed oil or other neutral-flavoured oil
Add-Ins
- 2 1/2 cups marshmallows (regular size, most cut in half)
- 1 cup pistachios, unsalted, toasted
- 1 cup glacé cherries
- 1/2 cup desiccated coconut, unsweetened (or finely shredded, not flakes)
Instructions
- Prepare the Pan: Lightly grease a 20cm (8″) square baking pan with butter, then line it with baking (parchment) paper, leaving an overhang on the sides to easily lift out the rocky road later.
- Reserve Toppings: Set aside about 8 of the nicest glacé cherries for the topping. Finely chop 1 tablespoon of the pistachios to sprinkle on top as well.
- Melt Chocolate: Place the white chocolate and grapeseed oil in a heatproof bowl. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is fully melted and smooth.
- Combine Add-Ins: Gently stir the marshmallows, pistachios, glacé cherries, and desiccated coconut into the melted chocolate until evenly distributed.
- Pour into Pan: Transfer the mixture into the prepared pan and spread it out evenly. To settle the mixture well, bang and shake the pan assertively to eliminate air pockets.
- Add Toppings: Arrange the reserved glacé cherries evenly on top and sprinkle with the finely chopped pistachios.
- Refrigerate: Place the pan in the refrigerator for about 3 hours or until the rocky road is firm and set.
- Serve: Use the parchment paper overhang to lift the rocky road out of the pan. Cut into desired sized pieces by slicing into 5 lines one way and then into chunks for eating or gifting.
