Description

This White Chocolate Rocky Road recipe is a delightful and easy no-bake treat combining creamy white chocolate with crunchy pistachios, chewy marshmallows, sweet glacé cherries, and a hint of coconut. Perfect as a crowd-pleasing dessert or gift, it requires minimal prep and sets firmly in the fridge for a luscious, rich, and textured snack.

Ingredients

Chocolate Mixture

  • 500g (1 lb) white chocolate melts, discs, chips, or chopped block
  • 2 tbsp grapeseed oil or other neutral-flavoured oil

Add-Ins

  • 2 1/2 cups marshmallows (regular size, most cut in half)
  • 1 cup pistachios, unsalted, toasted
  • 1 cup glacé cherries
  • 1/2 cup desiccated coconut, unsweetened (or finely shredded, not flakes)

Instructions

  1. Prepare the Pan: Lightly grease a 20cm (8″) square baking pan with butter, then line it with baking (parchment) paper, leaving an overhang on the sides to easily lift out the rocky road later.
  2. Reserve Toppings: Set aside about 8 of the nicest glacé cherries for the topping. Finely chop 1 tablespoon of the pistachios to sprinkle on top as well.
  3. Melt Chocolate: Place the white chocolate and grapeseed oil in a heatproof bowl. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is fully melted and smooth.
  4. Combine Add-Ins: Gently stir the marshmallows, pistachios, glacé cherries, and desiccated coconut into the melted chocolate until evenly distributed.
  5. Pour into Pan: Transfer the mixture into the prepared pan and spread it out evenly. To settle the mixture well, bang and shake the pan assertively to eliminate air pockets.
  6. Add Toppings: Arrange the reserved glacé cherries evenly on top and sprinkle with the finely chopped pistachios.
  7. Refrigerate: Place the pan in the refrigerator for about 3 hours or until the rocky road is firm and set.
  8. Serve: Use the parchment paper overhang to lift the rocky road out of the pan. Cut into desired sized pieces by slicing into 5 lines one way and then into chunks for eating or gifting.

Notes

  • You can use white chocolate melts, chips, or a chopped block of white chocolate based on availability.
  • Grapeseed oil or any neutral-flavored oil helps achieve smooth melted chocolate texture but can be omitted if preferred.
  • Toasting pistachios enhances their flavor and crunch in the rocky road.
  • Cutting regular-sized marshmallows in half helps in better mixing and texture distribution.
  • Using unsweetened desiccated coconut keeps the dessert from becoming overly sweet and adds a subtle texture.
  • The recipe requires refrigeration to firmly set the rocky road before serving.
