Ingredients

Granola Cups

  • 1 1/2 cups old-fashioned oats
  • 3/4 cup peanut butter (smooth or crunchy)
  • 3 Tablespoons maple syrup

Filling and Topping

  • 2 cups vanilla yogurt
  • Fresh raspberries (or your favorite berries)
  • Optional: a small dollop of reserved peanut butter for topping


Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to get ready for baking the granola cups.
  2. Combine Ingredients: In a large bowl, mix the old-fashioned oats, peanut butter, and maple syrup thoroughly until the mixture is slightly sticky and holds together without being too wet.
  3. Form the Oat Cups: Evenly scoop the oat mixture into 6 greased muffin cups. Press down gently with the bottom of a small glass or your fingers to create a cup shape in each muffin tin.
  4. Bake: Bake the filled muffin tin in the oven for 12 to 15 minutes or until the edges of the oat cups turn golden brown and feel firm to the touch.
  5. Cool: Allow the oat cups to cool completely inside the muffin tin before carefully removing them to avoid breaking.
  6. Assemble: Once cooled, fill each granola cup with about 1/4 cup of vanilla yogurt. Top each with fresh raspberries or any berries of your choice and optionally add a small dollop of reserved peanut butter for extra flavor.
