Description

This quick and elegant 10-minute smoked salmon omelette combines fluffy eggs, fresh tender herbs, creamy goat cheese, and rich smoked salmon for a delightful and satisfying breakfast or brunch dish. Perfectly balanced flavors and textures come together in a simple stovetop preparation.

Ingredients

Egg Mixture

  • 2 eggs
  • 1 tablespoon chopped fresh tender herbs (dill, chives, parsley)
  • Pinch of salt
  • Ground black pepper, to taste

For Cooking

  • Butter, as needed for the pan

Fillings

  • 1 oz goat cheese, crumbled
  • 3 oz smoked salmon (hot- or cold-smoked)

Instructions

  1. Prepare the eggs: Crack the eggs into a medium bowl and add the chopped fresh herbs along with a pinch of salt and ground black pepper. Whisk thoroughly until the yolks and whites are well combined and the herbs are evenly distributed.
  2. Cook the eggs: Heat a small nonstick skillet over medium heat. Add a small pat of butter and swirl to coat the bottom of the pan. Pour in the egg mixture and stir gently and slowly for 1-2 minutes until the eggs begin to set but are still soft.
  3. Form the omelette base: Once a layer of cooked egg forms on the pan bottom, gently shake the pan to even out the eggs into a flat layer. Let it cook undisturbed for another 1-2 minutes until mostly cooked through but still tender.
  4. Add goat cheese and salmon: Place the crumbled goat cheese in a line down the middle of the omelette. If using hot-smoked salmon, crumble it over the goat cheese now. Continue cooking for 1-2 more minutes to warm the goat cheese and cook the eggs fully.
  5. Fold and serve: Use a spatula to fold the omelette into thirds and transfer it onto a plate. If using cold-smoked salmon, arrange the salmon slices gently on top of the finished omelette. Garnish with additional fresh herbs and serve immediately.

Notes

  • Use a nonstick skillet for best results to prevent sticking and ease folding.
  • Fresh herbs add brightness; feel free to adjust the combination based on preference.
  • Hot-smoked salmon is heated in the omelette; cold-smoked salmon is best added after folding to maintain silky texture.
  • Butter can be substituted with olive oil for a different flavor profile.
  • This recipe serves one but can be easily scaled up.
