Ingredients
Egg Mixture
- 2 eggs
- 1 tablespoon chopped fresh tender herbs (dill, chives, parsley)
- Pinch of salt
- Ground black pepper, to taste

- Butter, as needed for the pan
Fillings
- 1 oz goat cheese, crumbled
- 3 oz smoked salmon (hot- or cold-smoked)
Instructions
- Prepare the eggs: Crack the eggs into a medium bowl and add the chopped fresh herbs along with a pinch of salt and ground black pepper. Whisk thoroughly until the yolks and whites are well combined and the herbs are evenly distributed.
- Cook the eggs: Heat a small nonstick skillet over medium heat. Add a small pat of butter and swirl to coat the bottom of the pan. Pour in the egg mixture and stir gently and slowly for 1-2 minutes until the eggs begin to set but are still soft.
- Form the omelette base: Once a layer of cooked egg forms on the pan bottom, gently shake the pan to even out the eggs into a flat layer. Let it cook undisturbed for another 1-2 minutes until mostly cooked through but still tender.
- Add goat cheese and salmon: Place the crumbled goat cheese in a line down the middle of the omelette. If using hot-smoked salmon, crumble it over the goat cheese now. Continue cooking for 1-2 more minutes to warm the goat cheese and cook the eggs fully.
- Fold and serve: Use a spatula to fold the omelette into thirds and transfer it onto a plate. If using cold-smoked salmon, arrange the salmon slices gently on top of the finished omelette. Garnish with additional fresh herbs and serve immediately.
