  • ¾ cup barbecue sauce (Sweet Baby Ray’s recommended)
  • ⅓ cup Italian dressing (store-bought bottled, your favorite)
  • 2 tablespoons light brown sugar (optional)


Instructions

  1. Cook the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the diced chicken breast, then season with salt and freshly ground black pepper. Cook the chicken for about 5 to 7 minutes, stirring occasionally, until the pieces are nearly cooked through and starting to brown.
  2. Prepare and add the sauce: In a 2-cup measuring cup or small bowl, combine the barbecue sauce, Italian dressing, and, if using, the light brown sugar. Stir well to mix. Pour this sauce mixture evenly over the chicken in the skillet.
  3. Simmer the chicken in sauce: Reduce the heat to medium or medium-low. Allow the chicken to simmer in the sauce for another 2 to 3 minutes, stirring occasionally, until the chicken is fully cooked through and the sauce has thickened slightly.
  4. Garnish and serve: Optionally garnish with fresh herbs such as parsley, basil, cilantro, or chopped green onions. Serve the barbecue chicken skillet immediately for best flavor and texture.
