Description

These 25-Minute Vegetarian Skillet Fajitas with Refried Beans are a quick, vibrant, and flavorful meal perfect for weeknights. Loaded with colorful bell peppers, sweet red onions, and hearty refried beans, all simmered in a zesty fajita sauce, this skillet dish is easy to prepare and offers a satisfying vegetarian option. Serve with warm tortillas and your favorite sauces and cheese for a delicious, customizable fajita experience.

Ingredients

Vegetables and Sauces

  • 3 bell peppers, thinly sliced
  • 1 red onion, thinly sliced
  • ½ cup fajita sauce
  • 2 cups vegetarian refried beans (or one 15-ounce can)

Other Ingredients

  • 2 tablespoons olive oil or neutral oil
  • 8 corn or flour tortillas (fajita or small size)
  • Shredded cheese or Cotija crumbles, for topping
  • Creamy Jalapeno Sauce, for garnish
  • Cilantro Lime Sauce, for garnish

Instructions

  1. Prepare the Vegetables: Slice the red bell peppers and onions into similar sizes for even cooking. For extra caramelized onions, slice them thinner than the peppers.
  2. Cook the Veggies: Drizzle the oil in a skillet and heat over medium-high heat. Add the sliced vegetables and a pinch of salt, tossing to coat them in the hot oil. Cook for 8-10 minutes, stirring occasionally to allow some char to develop.
  3. Add Fajita Sauce: Pour the fajita sauce gently over the veggies and stir well to coat. Let the sauce simmer with the vegetables for 3-4 minutes until it slightly thickens and the veggies are well coated. Meanwhile, heat the refried beans separately either on the stovetop or in the microwave.
  4. Assemble the Fajitas: Once the veggies are tender and the sauce has thickened, remove the skillet from heat. Warm the tortillas. Spread a layer of refried beans onto each tortilla, then top with the sautéed veggies. Garnish with shredded cheese or Cotija crumbles, creamy jalapeno sauce, and cilantro lime sauce as desired. Serve immediately and enjoy!

Notes

  • Use any color combination of bell peppers for a vibrant dish.
  • For a gluten-free option, use corn tortillas instead of flour tortillas.
  • You can substitute vegetarian refried beans with any style of refried beans if preferred.
  • Adjust the fajita sauce quantity and seasoning to taste.
  • The creamy jalapeno and cilantro lime sauces add flavor but can be omitted or substituted with sour cream or guacamole.
