Ingredients
Bottom Layer: Chocolate Almond Butter
- ½ cup Almond Breeze almondmilk Vanilla
- ¼ cup plus 2 tablespoons almond butter
- ½ frozen banana
- 1 tablespoon cocoa powder
- 2 soft Medjool dates, pitted
- handful of ice
Middle Layer: Banana Vanilla
- 1 cup Almond Breeze almondmilk Vanilla
- 1½ frozen bananas
- 2 soft Medjool dates, pitted
- 1 teaspoon pure vanilla extract or 1 scraped vanilla bean
- handful of ice
Top Layer: Red Berry
- 1 cup frozen strawberries
- 1 cup frozen raspberries
- 1 cup Almond Breeze almondmilk Vanilla
- Chocolate chips for garnish, optional
Instructions
- Make the bottom layer: Combine the almond milk, almond butter, frozen banana, cocoa powder, and Medjool dates in a blender. Blend until smooth and the dates are fully pureed. Add a handful of ice and pulse to incorporate. Pour the mixture evenly into 3 glasses (or 4 smaller glasses) and freeze for 30 minutes to set slightly.
- Make the middle layer: In the blender, combine the almond milk, frozen bananas, Medjool dates, and vanilla extract or scraped vanilla bean. Blend until smooth. Add a handful of ice and pulse briefly. Carefully layer this mixture on top of the set bottom layer in the glasses. Return the smoothies to the freezer for another 30 minutes to chill.
- Make the top layer: Blend the frozen strawberries, frozen raspberries, and almond milk together until smooth. This layer will be thick and creamy. Remove the glasses from the freezer and gently spoon the red berry layer over the banana vanilla layer.
- Garnish and serve: Optionally sprinkle chocolate chips on top of the layered smoothie for a sweet finish. Let the smoothies sit for 5 to 10 minutes to thaw slightly to a spoonable and drinkable consistency. Serve and enjoy promptly for best texture and flavor.
Notes
- The three layers should be blended and frozen individually for the best texture and to maintain separation.
- Using Medjool dates adds natural sweetness and creaminess to each layer.
- Adjust the thickness by varying the amount of ice and frozen fruit as desired.
- To make the red berry layer sweeter, you can add a little honey or maple syrup if needed.
- These smoothies are best enjoyed fresh but can be stored in the freezer and thawed briefly before serving.
