Ingredients
Layers
- 1 16-ounce can refried beans
- 2 ripe avocados (peeled and pitted)
- Juice of 1 lime
- Salt and pepper (to taste)
- 1 8-ounce container sour cream
- 1 cup chunky salsa, drained
- 1 cup shredded Mexican blend or cheddar cheese
- 1 2.25-ounce can sliced olives
- 3-4 green onions, sliced
- ¼ cup diced tomatoes
- 2 Tablespoons diced jalapeno peppers (optional topping)
Instructions
- Prepare the Guacamole:
In a small mixing bowl, combine the peeled and pitted avocados with the lime juice. Season with salt and pepper to taste, then mash together using a fork until smooth but still slightly chunky. Set aside.
- Layer Refried Beans and Guacamole:
Divide the refried beans evenly at the bottom of each small cup. Next, add a layer of the prepared guacamole, followed by a layer of sour cream.
- Add Salsa Layer:
Drain any excess liquid from the chunky salsa and spoon it over the sour cream in each cup.
- Top with Cheeses and Vegetables:
Sprinkle shredded cheese over the salsa, then add sliced olives, green onions, and diced tomatoes evenly atop each cup. Optionally, add diced jalapeno peppers for some heat.
- Chill and Serve:
Refrigerate the assembled cups until ready to serve. Just before serving, garnish each cup with a single tortilla chip if desired for a fun presentation and added crunch.
Notes
- Use ripe avocados for the creamiest guacamole layer.
- Drain salsa well to avoid soggy layers.
- This recipe can be made ahead and refrigerated for up to 4 hours before serving.
- Add jalapenos cautiously if you prefer mild flavors.
- Serve with tortilla chips or vegetable sticks for dipping.
