- 2 firm avocados
- 1/2 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 1 Tablespoon salt (divided)
- 1 Tablespoon black pepper (divided)
- 2 large eggs
- Olive oil spray
Instructions
- Prepare the breadcrumb mixture: Place panko breadcrumbs in a medium bowl. Add half the salt and half the black pepper to the breadcrumbs and stir until well combined. Pour the mixture onto a shallow plate for easy dredging.
- Prepare the flour mixture: In another medium bowl, add the all-purpose flour along with the remaining salt and black pepper. Mix thoroughly and pour onto a separate shallow plate.
- Whisk the eggs: In a third medium bowl, whisk the two large eggs until the yolks and whites are fully combined.
- Slice the avocados: Cut the avocados in half and remove the pits. Carefully use a spoon to scoop out the avocado flesh in one piece from each shell. Place the avocado halves flat side down on a cutting board and slice into 1/2-inch thick wedges.
- Coat the avocado slices: Take each avocado slice and first dredge it in the flour mixture, coating evenly. Then dip into the whisked eggs, allowing any excess to drip off. Finally, press the slice into the breadcrumb mixture, ensuring a good coating. Place the breaded slices on a wire rack. Repeat this process for all slices.
- Spray with olive oil: Lightly spray the breaded avocado slices with olive oil spray to help them crisp up in the air fryer.
- Preheat the air fryer: Set the air fryer temperature to 390°F (approximately 200°C) and allow it to preheat.
- Arrange slices in air fryer basket: Place the avocado slices in the air fryer basket in a single layer, leaving space between each slice for proper air circulation.
- Air fry the avocado fries: Cook the slices for 7 minutes. Then carefully flip each slice over and continue air frying for an additional 5 minutes, or until the fries are golden brown and crispy.
