Ingredients
Cheesecake Filling
- 16 oz. cream cheese, at room temperature
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Fig Jam Filling
- 8.5 oz. fig jam (1 jar)
Egg Rolls
- 15 whole egg roll wrappers, refrigerated and ready-made
- Egg wash: 1 egg beaten with 1 tablespoon water
- Olive oil cooking spray
Finishing Touches
- 2 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Prepare the Cheesecake Filling: In the bowl of an electric mixer fitted with the whip attachment, combine cream cheese, sugar, lemon juice, and vanilla extract. Mix well on medium speed for 2 minutes until smooth and well combined. Transfer the cheesecake filling to a pastry bag or a zip-top bag with the corner snipped for easy piping.
- Prepare the Fig Jam: Stir the fig jam well in its jar until loosened, making it easy to scoop out.
- Assemble Egg Rolls: Lay an egg roll wrapper with the pointed end facing you. In the center, pipe approximately 2 tablespoons of cheesecake filling, then top with 1 tablespoon of fig jam. Brush the edges of the wrapper with egg wash. Fold the bottom corner over the filling, roll halfway snugly, then fold in both sides snugly against the filling. Continue rolling to the top corner and seal it with more egg wash. Repeat with all wrappers. Lightly spray both sides of each egg roll with olive oil cooking spray.
- Preheat Air Fryer: Preheat your air fryer to 370°F (188°C) for 10 minutes. Let the prepared egg rolls stand at room temperature during this time.
- Air Fry the Egg Rolls: Place 4-5 egg rolls in the hot fryer basket, making sure not to overcrowd. Fry for 5-7 minutes or until egg rolls are golden brown on top. Note: It’s possible for a few egg rolls to burst and release filling; wipe the basket with a paper towel between batches if needed.
- Finish and Serve: Remove cooked egg rolls and allow them to cool slightly. Lightly brush the tops with melted butter. In a small bowl, mix sugar and cinnamon, then sprinkle this mixture over the warm egg rolls. Serve immediately or at room temperature. Store leftovers in the refrigerator.
Notes
- Use toothpicks to secure egg rolls if they tend to burst at the closure before cooking.
- For a pan-frying alternative, fill a large skillet with oil (about 1/4 full), heat to 350°F, and fry egg rolls flap-side-down until golden, turning occasionally (about 2-3 minutes). Drain on paper towels before coating with butter and cinnamon sugar.
- Air fryer models vary; you may need to adjust temperature and time to prevent egg rolls from splitting. Toast 1-2 egg rolls first to perfect the settings.
