Ingredients
Potatoes
- 1 ½ pounds russet potatoes, peeled if desired and cut into ½” chunks
- 1 tablespoon olive oil
- ½ teaspoon seasoned salt
- ½ teaspoon garlic powder
Vegetables & Butter
- ¼ cup chopped onion
- ¼ cup diced red bell pepper (or green bell pepper)
- 1 tablespoon melted butter
Instructions
- Prepare Potatoes: Peel the russet potatoes if you prefer and cut them into ½ inch chunks for even cooking.
- Season Potatoes: In a large bowl, toss the potato chunks with olive oil, seasoned salt, and garlic powder until all pieces are well coated.
- Initial Air Fry: Place the seasoned potatoes in the air fryer basket. Set the air fryer to 380°F and cook for 15 minutes to start crisping the potatoes.
- Add Vegetables and Continue Cooking: Mix the chopped onion, diced bell pepper, and melted butter together. Add this mixture to the potato-filled air fryer basket, reduce the air fryer temperature to 340°F, and cook for an additional 15 minutes or until the potatoes and vegetables are tender and cooked through.
- Serve: Remove the home fries from the air fryer and serve immediately while hot and crispy.
Notes
- For extra crispiness, shake the air fryer basket halfway through cooking.
- Russet potatoes work best for this recipe due to their starchy texture, but Yukon Gold potatoes are a good alternative.
- You can adjust the seasoning to your taste by adding paprika, cayenne, or black pepper.
- This recipe is easily doubled for larger groups by cooking in batches.
