  • 1 cup almond flour (100 grams)
  • 1/3 cup smooth peanut butter (75 grams)
  • 1 cup dark chocolate chips
  • 1 tablespoon almond flakes
  • 2 teaspoons coconut oil
  • Sea salt flakes, to taste


Instructions

  1. Prepare the mixture: Process the pitted Medjool dates, almond flour, and smooth peanut butter in a food processor until the mixture resembles breadcrumbs. Pinch a small amount between your fingers to check the consistency; it should hold together. If it crumbles, add a little more peanut butter until it sticks.
  2. Form the balls: Roll the mixture into about 22 small balls. Place them on a small baking sheet that fits in your freezer and transfer to the freezer for 15-20 minutes to firm up.
  3. Prepare almond flakes and chocolate: Roughly chop the almond flakes. Melt the dark chocolate chips using a bain-marie method by placing a heatproof glass bowl over a pot of simmering water. If the melted chocolate is too thick, stir in 2 teaspoons of coconut oil to thin it.
  4. Dip the balls in chocolate: Using two forks, dip each chilled ball into the melted chocolate. Lift the ball with one fork and carefully place it onto the other fork to let excess chocolate drip off. Then transfer it back onto the baking sheet.
  5. Add toppings and set: Sprinkle each chocolate-coated ball with sea salt flakes (if using) and chopped almond flakes. Repeat with all balls. Let the chocolate set by placing the baking sheet in a cool room or refrigerator.
  6. Drizzle extra chocolate: Once set, use a fork to drizzle any remaining melted chocolate over the balls for decoration. Allow this final drizzle to set completely before serving.
