Ingredients

Dry Ingredients

  • 1 ¾ cups all-purpose flour (210g)
  • ¼ teaspoon kosher salt
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon ground ginger
  • ⅛ teaspoon ground nutmeg

Wet Ingredients

  • ⅔ cup granulated sugar (133g)
  • 1 large egg (room temperature)
  • ¼ cup vegetable oil (60ml)
  • ¼ cup unsalted butter, melted (57g)
  • ½ cup full-fat Greek yogurt (room temperature, 65g)
  • ¼ cup whole milk (room temperature, 60ml)
  • 1 teaspoon vanilla extract or paste

Fruit

  • 2 medium apples, peeled, cored and diced (1½ cups or 150g)

Streusel Topping

  • ¼ cup unsalted butter, melted (57g)
  • ½ cup all-purpose flour (60g)
  • ½ cup light brown sugar (100g)
  • ½ cup rolled oats (50g)
  • ⅛ teaspoon kosher salt
  • ⅛ teaspoon cinnamon

Instructions

  1. Prepare the Streusel Topping: In a bowl, mix melted butter, flour, brown sugar, oats, cinnamon, and salt using a fork until pea-sized crumbs form. Set aside.
  2. Combine Dry Ingredients: Whisk together flour, salt, baking powder, cinnamon, ginger, and nutmeg in a large bowl and set aside.
  3. Mix Wet Ingredients: In another large bowl, whisk sugar, egg, vegetable oil, melted butter, Greek yogurt, milk, and vanilla extract together until fully combined.
  4. Combine Wet and Dry: Pour wet ingredients into the dry ingredients bowl and gently mix with a rubber spatula or wooden spoon until just combined. Avoid overmixing.
  5. Fold in Apples: Carefully fold the diced apples into the batter, ensuring even distribution without overmixing.
  6. Preheat and Prepare Muffin Tin: Preheat the oven to 425°F (220°C). Line a standard 12-cup muffin tin with liners or grease the tin thoroughly.
  7. Fill Muffin Cups: Divide the batter evenly among the 12 muffin cups.
  8. Add Streusel Topping: Sprinkle the prepared oat streusel evenly over each muffin’s batter.
  9. Initial Bake: Bake at 425°F for 5 minutes to give the muffins an initial rise.
  10. Continue Baking: Reduce the oven temperature to 350°F (175°C) and bake for an additional 13-16 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool Muffins: Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For best texture, do not overmix the muffin batter to keep muffins tender and light.
  • Room temperature ingredients help the batter come together smoothly.
  • The initial high temperature bake helps the muffins rise quickly and form a crust.
  • Storing muffins in an airtight container will keep them fresh for up to 3 days.
  • These muffins freeze well; thaw them overnight at room temperature or warm briefly in the microwave.
