Ingredients
Whipped Goat Cheese Mixture
- 8 oz. whipped cream cheese
- 4 oz. goat cheese
Avocado Topping
- 3 large avocados, peeled and pitted
- 1 small red onion, diced
- Salt & pepper to taste
Toast
- 1 French sourdough loaf (or any rustic bread), enough for 10 1-inch slices
Garnishes (optional)
- Edible flowers
- Poppy seeds (a sprinkle)
- Sesame seeds (a sprinkle)
Instructions
- Prepare the whipped goat cheese: In a mixing bowl, combine 8 oz. whipped cream cheese with 4 oz. goat cheese, stirring thoroughly until smooth and well mixed. Set aside.
- Make the avocado mixture: Dice the small red onion finely. In a separate bowl, mash the peeled and pitted avocados using a potato masher. Add the diced onion along with a generous sprinkle of salt and pepper, then stir to combine evenly. Transfer the mixture to a container and press cellophane wrap directly onto the surface to prevent browning.
- Toast the bread: Slice the French sourdough loaf into 10 slices, each about 1 inch thick. Toast the slices in an oven preheated to 400°F (204°C) for 5 to 7 minutes until golden and crisp.
- Assemble the toast: Once toasted, spread a generous layer of the whipped goat cheese mixture on each slice. Sprinkle edible flowers on one half for a beautiful presentation. Spoon the avocado and onion mixture generously on the other half. Finish with a light sprinkle of sesame and poppy seeds if desired.
Notes
- For best freshness, consume immediately after assembling.
- Pressing plastic wrap onto avocado helps prevent oxidation and browning.
- Use ripe avocados for creamy texture and best flavor.
- If edible flowers are unavailable, fresh herbs like cilantro or basil can be used as an alternative garnish.
- Sourdough or rustic bread provides the ideal texture; feel free to substitute with gluten-free bread if needed.
