Description

This delicious breakfast sandwich features fluffy baked eggs, savory sausage patties, melted cheddar cheese, and toasted English muffins, perfect for a satisfying and hearty morning meal. Ready in just 35 minutes, it’s an easy recipe to prepare ahead and enjoy with family or guests.

Ingredients

Egg Mixture

  • 8 large eggs
  • 3 tablespoons milk
  • Salt and pepper to taste

Meat

  • 6 cooked sausage patties (or 6 slices ham or bacon, cooked)

Other

  • 6 English muffins (split)
  • 6 slices cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) and grease a 9×13-inch baking pan to prevent sticking.
  2. Prepare Egg Mixture: In a mixing bowl, whisk together the 8 large eggs, 3 tablespoons of milk, and add salt and pepper to taste until fully combined.
  3. Bake Eggs: Pour the egg mixture evenly into the greased pan and bake in the preheated oven for 12-14 minutes, or just until the center is set but not overcooked, to ensure fluffy texture.
  4. Heat Sausage: While eggs are baking, heat the cooked sausage patties according to package directions or your preferred method until warm and slightly crispy.
  5. Toast Muffins: Once the eggs are done, turn on the broiler. Place the English muffin halves on a baking sheet, split side up, and broil for 2-3 minutes or until lightly crisped.
  6. Melt Cheese: Remove muffins from the oven and top 6 of the halves with a slice of cheddar cheese. Return these halves to the broiler for about 1 minute until the cheese melts.
  7. Slice Eggs: Cut the baked egg slab into 6 long rectangular slices. Fold each rectangle in half and place on the unfrosted English muffin halves.
  8. Assemble Sandwiches: Top the folded egg slices with the heated sausage patties, then place the cheese-topped muffin halves on top to complete each sandwich. Serve immediately.

Notes

  • You can substitute sausage patties with cooked bacon or ham slices if preferred.
  • For a vegetarian option, use cooked vegetarian patties or omit the meat entirely.
  • Egg mixture can be customized with herbs or vegetables for added flavor.
  • To reheat sandwiches, wrap them in foil and warm in a 350°F oven for 10 minutes.
  • Ensure the eggs are not overbaked to keep them moist and tender.
