These Baklava Cheesecake Bars combine the flaky, buttery layers of traditional baklava with a creamy, pistachio-infused cheesecake layer, swirled with vanilla and pistachio batters and finished with a fragrant honey syrup. Ingredients
Baklava Base
- 1 cup raw unsalted pistachios
- 15 sheets phyllo dough (cut to fit into 8×8” pan)
- ½ cup raw pistachios
- ½ cup raw walnuts
- 1 teaspoon ground cinnamon
- ½ teaspoon kosher salt
- ¼ cup light brown sugar (packed)
- ½ cup unsalted butter (melted)
Cheesecake Layer
- 16 oz cream cheese (very soft, room temperature)
- ½ cup granulated sugar
- 2 tablespoons cornstarch
- 2 large eggs (room temperature & whisked)
- 1 teaspoon vanilla extract
- ½ cup sour cream (room temperature)
- ½ cup pistachio paste
Honey Syrup
- ¼ cup honey
- ¼ cup water
- 2 tablespoons granulated sugar
- ¼ teaspoon orange blossom water or rose extract (optional)
Instructions
- Make the pistachio paste: If you do not have store-bought pistachio paste, prepare it in advance following your preferred method to ensure it’s ready to be folded into the batter.
- Prepare phyllo dough: Cut the phyllo sheets into squares that will fit an 8×8-inch pan and cover them with a towel to prevent drying out.
- Mix nut filling: Finely chop ½ cup pistachios and ½ cup walnuts, then combine with cinnamon, salt, and brown sugar. Set aside.
- Prepare the pan and layers: Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper slings and butter the parchment. Layer one sheet of phyllo dough in the pan, brush with melted butter, and repeat layering and buttering until you have 5 sheets.
- Add nut filling and more phyllo: Evenly sprinkle half of the nut mixture over the layered phyllo. Then repeat layering 5 more buttered phyllo sheets, followed by the remaining nut mixture, and finally the last 5 sheets of phyllo layered and brushed with butter on top.
- Bake baklava base: Bake this layered phyllo and nut mixture for 15 minutes at 350°F. Remove and transfer to a wire rack to cool slightly, gently pressing down any puffed areas.
- Reduce oven temperature: Lower the oven heat to 315°F (157°C) to prepare for the cheesecake layer.
- Prepare cheesecake batter: In a stand mixer bowl fitted with a paddle or using a hand mixer, beat cream cheese until smooth. Add sugar and cornstarch, mixing until creamy. Gradually drizzle whisked eggs while mixing on low, followed by vanilla extract and sour cream; mix until incorporated.
- Create pistachio cheesecake batter: Remove one-third of the cheesecake batter into a separate bowl and gently fold in the pistachio paste until a smooth, light green mixture forms.
- Assemble cheesecake layer: Alternate spoonfuls of vanilla and pistachio batters over the baklava base. Using a butter knife, lightly swirl the batters together to create a marble effect; avoid over-swizzling to maintain distinct patterns.
- Bake cheesecake layer: Bake for 30 to 40 minutes until the edges are set and have a matte appearance, while the center still jiggles slightly when moved.
- Prepare honey syrup: While baking, combine water, honey, sugar, and optional orange blossom water or rose extract in a saucepan over medium heat. Stir until sugar dissolves and syrup is heated through.
- Add syrup to cheesecake bars: Upon removing from the oven, slowly pour the warm honey syrup around the edges and sides of the cheesecake bars, allowing it to soak in. Gently brush any remaining syrup on top to add a glossy finish, taking care not to press hard and disturb the batter.
- Cool bars: Let bars cool on the counter for 1 hour, then refrigerate uncovered for at least 4 hours to set fully.
- Slice and serve: Use the parchment paper sling to lift bars from the pan, slice into 16 pieces, and serve chilled or at room temperature.
