Ingredients
Tortellini

Dressing

Salad
- 1-2 cups cherry or grape tomatoes, halved
- 2 cups baby spinach, coarsely chopped

- 8 ounces mozzarella pearls

Instructions
- Cook the Tortellini: Bring a large pot of water to a rapid boil. Add a generous pinch of salt, then add the tortellini. Cook according to the package directions until just al dente. Drain the tortellini and set aside.
- Prepare the Dressing: In a small jar or liquid measuring cup, combine olive oil, balsamic vinegar, 1/4 teaspoon salt, and a pinch of black pepper. Shake, whisk, or stir well until fully combined.
- Prevent Tortellini from Sticking: Toss the drained tortellini lightly with a small amount of the dressing or a drizzle of olive oil. Set aside to cool for 2-3 minutes.
