- 2 medium-large brown bananas (200 grams/about 3/4 cup mashed)
- 2 large eggs
- 2 tablespoons honey
- 2 teaspoons vanilla bean paste
- 1 cup milk
Dry Ingredients
- 2 1/2 cups rolled oats (250 grams)
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Add-ins
- 1/2 cup walnuts, roughly chopped (50 grams)
- 2 tablespoons chocolate chips (optional)

Instructions
- Preheat and prepare dish: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish with oil to prevent sticking.
- Mash the bananas: In a medium-large mixing bowl, mash the bananas with a fork until mostly smooth with minimal lumps remaining.
- Combine wet and dry ingredients: To the mashed bananas, add the eggs, honey, vanilla bean paste, and milk. Mix thoroughly to combine. Then add the rolled oats, cinnamon, nutmeg, baking powder, and salt. Stir well until everything is evenly incorporated. Fold in the chopped walnuts.
- Assemble and bake: Pour the oat mixture into the greased baking dish. If using, sprinkle the top evenly with chocolate chips. Bake in the preheated oven for 25 to 30 minutes until the top is golden brown and the mixture is set and firm to the touch.
- Cool and serve: Remove the baked oatmeal from the oven and let it cool for about 5 minutes. Once cooled slightly, cut into 9 equal-sized bars and serve warm or at room temperature.

- You can substitute milk with any plant-based milk for a dairy-free version.
- The chocolate chips are optional and can be omitted or replaced with dried fruit.
