Ingredients
Cake Ingredients
- 1 1/3 cups (275 g) mashed bananas (about 3 bananas)
- 3 cups (415 g) all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup (200 g) granulated sugar
- 1/2 cup (100 g) brown sugar
- 3/4 cup (170 g) salted butter
- 3 eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups buttermilk
Frosting Ingredients
- 1/2 cup salted butter, softened
- 1 (8 ounce) package cream cheese, softened
- 1 teaspoon vanilla extract
- 3 1/2 cups confectioners sugar
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch cake pan to prevent sticking.
- Whisk Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt. Set this mixture aside.
- Cream Wet Ingredients: In a large mixing bowl, cream the salted butter, granulated sugar, and brown sugar together for 4-5 minutes until the mixture is light and fluffy. Add the eggs one at a time, incorporating each fully before adding the next. Stir in the vanilla extract and mashed bananas until combined.
- Alternate Flour and Buttermilk: Gradually mix in half of the buttermilk followed by half of the flour mixture. Continue alternating the remaining buttermilk and flour mixture until everything is well incorporated, being careful not to overmix.
- Bake: Pour the batter into the prepared cake pan. Place it in the preheated oven and bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool: Remove the cake from the oven and allow it to cool completely in the pan to ensure the frosting doesn’t melt when applied.
- Make Frosting: In a medium bowl, beat the softened butter and cream cheese together until smooth and creamy. Add the vanilla extract, then gradually beat in the confectioners sugar until the frosting is smooth and spreadable.
- Spread Frosting: Evenly spread the cream cheese frosting over the cooled cake. Slice and serve.
Notes
- Make sure the bananas are very ripe for the best flavor and sweetness.
- Do not overmix the batter once the flour is added to keep the cake tender.
- Allow the cake to cool completely before frosting to prevent it from melting.
- You can substitute buttermilk with regular milk plus 1 tablespoon of lemon juice or vinegar if needed.
- Store leftover cake covered in the refrigerator to maintain freshness.
