Description

These homemade Banana Donuts feature a moist and fluffy texture enhanced by ripe bananas and a touch of cinnamon glaze. Perfectly baked, they offer a delightful balance of sweetness and warm spice, ideal for breakfast or a comforting snack.

Ingredients

Banana Donuts

  • ½ cup (100 g) granulated sugar
  • 3 Tablespoons (40 ml) neutral oil (sunflower, canola, or grapeseed)
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 Tablespoon milk (regular or dairy free)
  • 1 cup (125 g) all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (200 g) overripe bananas, mashed (about 2 medium bananas)

Cinnamon Glaze

  • 1 cup (120 g) powdered sugar (icing sugar)
  • 1 teaspoon ground cinnamon
  • 2 Tablespoons (31 ml) milk of choice (regular or vegan)
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and lightly grease your donut pans with cooking spray to ensure non-stick donuts. This recipe yields approximately 10 to 12 donuts.
  2. Mix Wet Ingredients: In a mixing bowl, whisk together the oil, granulated sugar, and vanilla extract until fully combined. Next, add the mashed bananas, egg, and milk, mixing until smooth.
  3. Add Dry Ingredients: Sift in the all-purpose flour, baking powder, and salt into the wet ingredients. Gently fold everything together until just combined. Be careful not to over mix to keep the donuts light and fluffy.
  4. Fill Donut Pan: Transfer the batter into a zip-top bag, cut off a corner, and pipe the batter into the donut pan cavities, filling them about halfway to allow room for rising.
  5. Bake: Bake in the preheated oven for 9 to 14 minutes, or until the donuts spring back when lightly pressed. Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Place a baking sheet or parchment paper underneath to catch glaze drips.
  6. Prepare Cinnamon Glaze: In a shallow wide bowl, whisk together the powdered sugar, ground cinnamon, milk, and vanilla extract until smooth and glossy. For a thicker glaze, double the ingredients and dip twice.
  7. Glaze Donuts: Dip each cooled donut upside down into the cinnamon glaze, covering the top evenly. Place back on the wire rack to let the glaze set. If applying a thicker glaze, wait for the first layer to set before dipping again.

Notes

  • Use overripe bananas for maximum sweetness and moisture.
  • To avoid overmixing, fold dry ingredients gently just until incorporated.
  • The glaze thickness can be adjusted by altering the amount of milk; less milk makes thicker glaze.
  • Donuts can be stored in an airtight container at room temperature for up to 2 days or refrigerated for up to 5 days.
  • For a dairy-free option, use plant-based milk and ensure powdered sugar is vegan-friendly.
