This indulgent dish is perfect for special occasions or weekend brunch, delivering a luscious blend of sweet, buttery flavors and a hint of rum flare.
Ingredients
Custard Mixture
- 4 large eggs
- 1 cup half-and-half
- 1 teaspoon vanilla extract
- 3/4 teaspoon ground cinnamon
Bread and Cooking
- 8 slices brioche bread (about 1-inch thick)
- Unsalted butter for greasing skillet (about 1 tablespoon)
Bananas Foster Topping
- 1/3 cup unsalted butter
- 1/3 cup light brown sugar
- 3 ripe bananas, sliced
- 1/4 cup dark rum (optional)
- Whipped cream for garnish (optional)
Instructions
- Whisk custard: In a shallow dish, combine 4 large eggs, 1 cup half-and-half, 1 teaspoon vanilla extract, and 3/4 teaspoon ground cinnamon. Whisk thoroughly until the mixture is smooth and well blended.
- Dip bread: Take each slice of brioche bread and dip it into the egg custard mixture, allowing each side to soak for about 30 seconds to fully absorb the flavors and moisture.
- Cook toast: Heat a large skillet over medium heat and melt enough butter to coat the surface. Cook the soaked brioche slices for about 2 to 4 minutes on each side until they turn golden brown and slightly crisp. Transfer cooked slices to a warm plate to keep warm.
- Melt sugar: In the same skillet, melt 1/3 cup unsalted butter. Stir in 1/3 cup light brown sugar until it dissolves completely and the mixture begins to bubble, creating a rich caramel sauce base.
- Caramelize bananas: Add the sliced bananas to the skillet and cook them in the caramel sauce for 2 to 3 minutes until they are softened and caramelized, absorbing all the sugary goodness.
- Flambé: Carefully pour 1/4 cup dark rum into the skillet over the bananas. If using, ignite the rum with a long match or lighter to flambé. Allow the flames to burn off naturally, which will develop a complex flavor and a touch of drama.
- Serve: Plate the French toast slices and generously spoon the warm bananas and caramel sauce over the top. Garnish with whipped cream if desired to add an extra layer of creaminess and indulgence.
Notes
- If you prefer to skip alcohol, omit the dark rum and skip the flambé step; the dish will still be delicious.
- Brioche bread is best for its rich texture, but challah or thick-cut white bread can be substituted.
- Serve immediately to enjoy the French toast warm with the gooey bananas foster topping.
- Be cautious when flambéing; ensure there are no flammable objects nearby and use a long lighter or match for safety.
- For a dairy-free version, substitute half-and-half with full-fat coconut milk and use a dairy-free butter alternative.
