Ingredients

Pancakes

  • 1 1/2 teaspoons kosher salt
  • 2 cups buttermilk (room temperature)
  • 2 large eggs (room temperature)
  • 1 tablespoon vanilla extract
  • Butter for cooking the pancakes

Bananas Foster Topping

  • 4 tablespoons unsalted butter
  • 1/2 cup brown sugar (100g)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 2 teaspoons vanilla extract
  • 2 medium bananas (cut into rounds, use ripe but firm bananas)


Instructions

  1. Prepare Pancake Dry Ingredients: In a mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, and kosher salt to combine all the dry components evenly.
  2. Mix Wet Ingredients: In a separate bowl, whisk together the eggs, vanilla extract, and room temperature buttermilk until smooth and well blended.
  3. Combine Batter: Gently fold the wet ingredients into the dry ingredients, mixing very carefully until just combined. Some lumps are fine and will help create fluffy pancakes. Let the batter rest for a few minutes while you preheat your cooking surface.
  4. Cook Pancakes: Preheat a griddle or cast-iron pan over medium-low heat. Add butter to the pan, then pour 1/4 to 1/3 cup of batter per pancake. Cook for about 2 minutes until bubbles appear on the surface, then flip once and cook another 1-2 minutes until the pancakes are golden brown on both sides. Keep cooked pancakes warm in the oven.
  5. Make Bananas Foster Sauce: In the same pan, melt butter over medium-low heat. Add brown sugar, salt, and cinnamon, stirring constantly and bringing to a gentle simmer. Cook for 4-5 minutes until a syrupy sauce forms.
  6. Add Vanilla and Bananas: Stir in the vanilla extract until it bubbles up slightly. Add banana slices, coat them evenly in the sauce, and cook for another 1-2 minutes to caramelize the bananas.
  7. Serve: Plate the warm pancakes, top generously with the Bananas Foster sauce, add extra butter and maple syrup if desired, and enjoy immediately.
