Ingredients

Beet Preparation

  • 8 oz beets (about 1 small beet)
  • 1 tbsp olive oil
  • 1/2 tsp salt

Dip

  • 8 oz goat cheese
  • 1 1/2 tbsp honey
  • 1 tbsp lemon juice
  • 1/2 clove garlic
  • 1/4 tsp black pepper

Garnish

  • 2 tbsp pistachios, toasted
  • Fresh parsley, chopped
  • Lemon zest


Instructions

  1. Prepare the beets: Peel and chop the beet into chunks. Place the beet pieces on a piece of parchment paper, drizzle with olive oil, and season with salt. Wrap the beets securely in the parchment paper, then wrap that in aluminum foil to create a sealed package.
  2. Roast the beets: Preheat your oven to 375°F (190°C). Place the wrapped beets on a baking tray and roast in the oven for about 1 hour, or until the beets are soft and can be easily pierced with a fork. Once roasted, remove from the oven and let them cool completely.
  3. Make the dip: In a large food processor, combine the cooled roasted beets, goat cheese, honey, olive oil, lemon juice, garlic, and salt. Blend for 30 seconds, then stop and scrape down the sides to ensure even mixing. Blend again for 30 seconds to 1 minute until the mixture is smooth and creamy. Taste the dip and adjust the honey, lemon juice, and salt as needed to balance the flavors.
  4. Serve: Transfer the dip into a serving bowl. Garnish with toasted pistachios, fresh parsley, and lemon zest for added texture and brightness. Serve with toast points, pita bread, or fresh vegetables for dipping.
