Description

A wholesome Berry Banana Bread combining the natural sweetness of ripe bananas and fresh berries with nutritious oats and chia seeds for a delightful, moist loaf perfect for breakfast or a healthy snack.


Ingredients

Dry Ingredients

  • 1 1/2 cups of flour
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 cup chia seeds
  • 1/4 tsp sea salt

Wet Ingredients

  • 1 cup fresh strawberries (chopped)
  • 1/2 cup fresh blueberries
  • 2 bananas (mashed)
  • 1/4 cup brown sugar or coconut sugar
  • 1/4 cup coconut oil (melted)
  • 1 egg
  • 1/4 cup Greek yogurt
  • 1/4 cup dairy-free milk


Instructions

  1. Preheat and Prepare: Preheat your oven to 350 degrees F. Lightly grease a 9×5 loaf pan and set aside to ensure the bread doesn’t stick during baking.
  2. Mix Dry Ingredients: In a large bowl, stir together the flour, rolled oats, baking powder, baking soda, chia seeds, and sea salt until evenly combined.
  3. Mix Wet Ingredients: Using a stand mixer or hand mixer, blend the melted coconut oil, mashed bananas, brown or coconut sugar, egg, Greek yogurt, and dairy-free milk until smooth and well combined.
  4. Combine Wet and Dry: Add the dry mixture to the wet ingredients and gently mix with a rubber spatula until just combined. Carefully fold in the chopped strawberries and blueberries to maintain their shape.
  5. Fill Pan and Bake: Spoon the batter into the prepared loaf pan and smooth the top evenly. Place the pan in the preheated oven.
  6. Bake: Bake for 45-50 minutes, or until the bread turns golden brown and a toothpick inserted into the center comes out clean. Remove from oven and let cool for at least 30 minutes before slicing and serving.
