Ingredients
Dry Ingredients
- 1 1/2 cups of flour
- 1 cup rolled oats
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 cup chia seeds
- 1/4 tsp sea salt
Wet Ingredients
- 1 cup fresh strawberries (chopped)
- 1/2 cup fresh blueberries
- 2 bananas (mashed)
- 1/4 cup brown sugar or coconut sugar
- 1/4 cup coconut oil (melted)
- 1 egg
- 1/4 cup Greek yogurt
- 1/4 cup dairy-free milk
Instructions
- Preheat and Prepare: Preheat your oven to 350 degrees F. Lightly grease a 9×5 loaf pan and set aside to ensure the bread doesn’t stick during baking.
- Mix Dry Ingredients: In a large bowl, stir together the flour, rolled oats, baking powder, baking soda, chia seeds, and sea salt until evenly combined.
- Mix Wet Ingredients: Using a stand mixer or hand mixer, blend the melted coconut oil, mashed bananas, brown or coconut sugar, egg, Greek yogurt, and dairy-free milk until smooth and well combined.
- Combine Wet and Dry: Add the dry mixture to the wet ingredients and gently mix with a rubber spatula until just combined. Carefully fold in the chopped strawberries and blueberries to maintain their shape.
- Fill Pan and Bake: Spoon the batter into the prepared loaf pan and smooth the top evenly. Place the pan in the preheated oven.
- Bake: Bake for 45-50 minutes, or until the bread turns golden brown and a toothpick inserted into the center comes out clean. Remove from oven and let cool for at least 30 minutes before slicing and serving.
