Instructions

  1. Activate Yeast: Combine the warm water, active dry yeast, and light brown sugar in the bowl of a stand mixer. Stir gently and let the mixture sit for 5 minutes until the yeast becomes foamy, indicating activation.
  2. Make the Dough: Add the bread flour, onion powder, and kosher salt to the yeast mixture. Mix on medium-low speed for 2 minutes until the ingredients start coming together in a lumpy dough.
  3. Knead Dough by Hand: Lightly flour a clean work surface and knead the dough by hand for 5 minutes until it turns soft and smooth, developing gluten for elasticity.
  4. First Rise: Place the dough ball into a greased bowl, coat it by rolling the dough in the oil, cover with plastic wrap or a dish towel, and let it rise in a warm place for 1 to 1.5 hours until doubled in size.
  5. Preheat Oven: Once risen, preheat your oven to 425℉ (218℃) and line a large baking sheet with parchment paper.
