Ingredients
Dough Ingredients
- ¾ cup warm water (110℉ / 180ml)
- 2 teaspoons active dry yeast
- ½ tablespoon light brown sugar
- 2¼ cups bread flour (270g)
- ¼ teaspoon onion powder
- 1¼ teaspoon kosher salt
Egg Wash & Seasoning
- 1 large egg (for egg wash)
- Everything But the Bagel Seasoning (to taste)
Whipped Cream Cheese
- 12 oz full-fat cream cheese (cold)
- ¼ cup heavy whipping cream (60ml)
- Fresh chives or scallions (finely chopped, for garnish)
Instructions
- Activate Yeast: Combine the warm water, active dry yeast, and light brown sugar in the bowl of a stand mixer. Stir gently and let the mixture sit for 5 minutes until the yeast becomes foamy, indicating activation.
- Make the Dough: Add the bread flour, onion powder, and kosher salt to the yeast mixture. Mix on medium-low speed for 2 minutes until the ingredients start coming together in a lumpy dough.
- Knead Dough by Hand: Lightly flour a clean work surface and knead the dough by hand for 5 minutes until it turns soft and smooth, developing gluten for elasticity.
- First Rise: Place the dough ball into a greased bowl, coat it by rolling the dough in the oil, cover with plastic wrap or a dish towel, and let it rise in a warm place for 1 to 1.5 hours until doubled in size.
- Preheat Oven: Once risen, preheat your oven to 425℉ (218℃) and line a large baking sheet with parchment paper.
- Shape Dough Balls: Punch down the dough gently, divide into 6 equal pieces, and form each piece into a ball by pulling and pinching the sides underneath, rolling seam-side down until tight.
- Rest Dough Balls: Place the dough balls on a baking sheet, cover lightly with plastic wrap, and rest for 5 to 10 minutes to relax gluten.
- Form Bialy Wells: Press each dough ball flat with your palm, then use your fingers to create a wide indentation about ½ inch from the edge, forming a well in the center.
- Apply Egg Wash and Seasoning: Whisk the egg with a splash of water to make an egg wash. Brush the edges of the dough with the egg wash and generously sprinkle Everything But the Bagel seasoning around the rim.
- Add Steam to Oven and Bake: Place the baking sheet with bialys on the center rack of the oven. Immediately pour ¼ cup of water onto the bottom of the oven to create steam and close the door quickly.
- Bake: Bake the bialy bagels for 10 minutes, or until they are lightly golden brown. Remove from the oven and cool on a wire rack.
- Prepare Whipped Cream Cheese: While the bialys bake or cool, add the cold cream cheese to a stand mixer fitted with a whisk attachment and whip on high speed until light and fluffy, scraping the sides as needed.
- Add Heavy Cream: Drizzle in the heavy whipping cream while continuing to whip on high speed until the cream cheese mixture becomes airy and scoopable.
- Serve: Use a 1.5-inch cookie scoop to place a generous dollop of whipped cream cheese into the center indentation of each bialy bagel.
- Garnish and Enjoy: Sprinkle finely chopped fresh chives or scallions over the cream cheese for a fresh, vibrant finish and serve immediately.
Notes
- Make sure the water used to activate yeast is warm but not too hot to avoid killing the yeast.
- Resting dough balls before shaping the wells helps to relax gluten for easier shaping.
- Using steam in the oven during baking helps create a chewy crust typical of bagels.
- Everything But the Bagel seasoning can be substituted with your preferred seasoning blend if desired.
- For a dairy-free version, try substituting cream cheese and cream with plant-based alternatives.
