  • 1⅔ cup all-purpose flour (200g)
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt

Instructions

  1. Preheat the oven: Set your oven to 350℉ (180℃) and line an 8×8-inch baking pan with parchment paper to prevent sticking and for easy removal of blondies.
  2. Combine wet ingredients and sugar: In a large bowl, whisk together the melted unsalted butter, melted cookie butter, and brown sugar vigorously until the mixture is smooth and fully combined.
  3. Add eggs and vanilla: Incorporate the whole egg, egg yolk, and vanilla paste or extract into the butter and sugar mixture, whisking again until evenly blended.
  4. Mix dry ingredients: Sprinkle the all-purpose flour, ground cinnamon, and kosher salt over the wet mixture. Using a rubber spatula, fold and gently mix the batter until all the flour disappears and the batter is smooth.
  5. Transfer batter to pan: Press the batter evenly into the prepared pan using a rubber spatula or clean hands, ensuring it reaches all the edges and corners for an even bake.
